  • 5 cups Rhubarb, Cut Into 1/2 Inch Pieces
  • 3 cups Sugar
  • 2 Tablespoons Water
  • 1 package Jello - 3 Ounces

    Clean and cut rhubarb into 1/2-inch pieces.

    Pour rhubarb into a large, heavy kettle.

    Add sugar and water.

    Bring to a boil, stirring frequently.

    Boil for 10 minutes.

    Remove from heat and stir in jello.

    Ladle into hot jars, place lids and rings.

    Process in a boiling water canner for 10 minutes.

    Leave bands in place for 24 hours.

    Label and store

    Quick notes: Ive used the following jello flavors with favorable results: strawberry, raspberry, cherry and grape.

    If you choose to use grape, youll want to have some purple paste food coloring on hand, as the resulting jam is a grayish green sort of color.

    It tastes fabulous but lacks a little in appearance.
