- 2 Tbsp. white flour
- 1/2 tsp. salt
- 1 1/4 c. white sugar
- 1 beaten egg
- 1 c. sour cream
- 1 tsp. vanilla
- 1/2 tsp. lemon extract
- 3 c. chopped rhubarb
Directions

1Sift first 3 ingredients.

2Set aside.

3With mixer, blend next 4 ingredients until smooth.

4Add rhubarb and dry ingredients. Stir until thoroughly combined.

5Pour into one unbaked pie shell. Bake at 400° for 15 minutes.

6Reduce heat to 350° and bake an additional 25 minutes.

7Cover pie with topping and place under broiler until lightly browned.

8Watch carefully to avoid burning.
