  • 1 recipe pastry for double crust
  • 3/4 lb. (3 c.) rhubarb, diced
  • 1/4 tsp. salt
  • 3/4 c. light corn syrup
  • 1/2 to 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1 egg, beaten
  • 1 Tbsp. butter

Directions

    Place rhubarb in pie shell.

    Combine sugar, cornstarch and salt.

    Add eggs and mix well.

    Add syrup and butter.

    Pur over rhubarb.

    Place pastry on top.

    Bake at 450° for 15 minutes, then reduce heat to 350° for 30 minutes or longer.
