  • 4 c. rhubarb, cut in 1/2-inch pieces
  • 1/4 c. sugar
  • 6 Tbsp. flour
  • 1/3 c. honey
  • 1/4 tsp. salt
  • 2 tsp. grated lemon peel
  • 2 Tbsp. butter or margarine

Directions

    Combine dry ingredients.

    Add honey; let stand a few minutes. Use two pie crusts, with slits in the top crust.

    Begin baking at 450° for 10 minutes.

    Reduce heat to 350° and cook until crust is golden brown.

    Cool a few minutes before serving.
