  • 3 c. rhubarb, cut up
  • 1 1/2 c. sugar
  • 3 Tbsp. flour
  • 2 eggs

Directions

    Beat eggs; reserve a small portion.

    Mix sugar, flour and rhubarb.

    Pour into unbaked pie shell; pour reserved egg over top. Bake at 425°.

    When it begins to turn brown, turn down to 350° and bake until center sets.
