  • 1 1/2 c. cut up rhubarb
  • 1 pie shell (unbaked)
  • 2 eggs
  • 1 c. sugar
  • 1 Tbsp. cornstarch
  • 1 tsp. vanilla
  • dash of salt

Directions

    Spread rhubarb in pie shell.

    Beat eggs, sugar, cornstarch, vanilla and salt.

    Pour over rhubarb.

    Bake at 425°

    for 5 minutes.

    Cut heat down to 325°
  7. 7
    and bake another 30 minutes, or until pie is set.
