- double pastry for 8 or 9-inch pie
- 3 Tbsp. flour
- 1 c. sugar
- 1 egg, beaten
- 2 1/2 to 3 heaping c. rhubarb, cut into small pieces
Directions

1Sift flour and sugar together.

2Add beaten egg and stir until mixed.

3Add the rhubarb and pour into pie plate lined with pastry. Dot with small amount of butter or margarine if desired.

4Cover with top crust, fastening edges securely.

5Make a few slits on top or prick the center with a fork for air and steam to escape. Bake in 400° to 425° oven for about 35 minutes or until brown.
