- 4 cups diced rhubarb, stalks
- 1 14 cups turbinado sugar
- 6 tablespoons flour
- 3 tablespoons softened butter
- 12 lemon, of zest
- pie crust, enough for the bottom and top of a pie
Directions

1Preheat oven to 450 degrees F (230 degrees C).

2Cream butter and sugar.

3Add the flour and lemon zest.

4When smooth, mix the diced rhubarb with it.

5Fill the pie crust, and top with the second piece of pie crust.

6Seal and make a few steam holes in the center of the pie.

7Put pie on the bottom oven rack and bake at 450 for 15 minutes.

8Reduce oven temperature to 350 degrees (175 degrees C) and bake for another 40 to 45 minutes.

9Remove from the oven and let rest for ten minutes before serving.
