Rhubarb Pudding

  • 2 c. rhubarb, diced
  • 1 egg
  • 1/2 c. sugar
  • 1/2 c. sweet cream or 1/2 c. milk with 2 level Tbsp. Crisco
  • 1 tsp. baking powder
  • 1/2 c. flour

Directions

    Grease a loaf cake pan.

    Place diced rhubarb in bottom of pan. Pour 1 cup of sugar over rhubarb.

    Then make batter and pour over rhubarb.

    Bake at 350° until tests clean, about 30 to 40 minutes.
