Rhubarb Shortcake

  • 1 Tbsp. lard
  • 1 c. sugar
  • 3 tsp. baking powder
  • 2 c. flour
  • 1 egg
  • 3/4 c. milk
  • 1 tsp. vanilla
  • dash of salt

Directions

    Mix together and pour over rhubarb. Bake at 350° for 45 minutes to an hour. (I use 6 to 7 cups diced rhubarb in a 7 1/4 x 11 baking dish with 1 1/2 cups sugar on top.) Tends to run over the side of dish.
