- 2 large red bell peppers, diced
- 2 yellow onions, finely chopped
- 3 c. cook brown rice (1 c. raw)
- 1/2 c. extra-virgin olive oil
- 2/3 c. golden raisins
- 2 tsp. dry mustard
- 2 tsp. Chinese five-spice powder
- 1 tsp. chili powder
- 1/4 tsp. ground cayenne pepper (increase to 1 tsp. if you like hot/spicy food)
Directions

1Cook rice as directed on package.

2Put the oil in a frying pan and saute peppers and onions until soft, but not brown.

3Stir in all the spices and raisins, then mix with rice.

4Put in a covered casserole and bake 30-45 minutes, or until hot through. This dish is better if prepared the day before.
