  • 1 1/2 c. rice
  • 3 eggs
  • 1/2 c. Parmesan cheese
  • bread crumbs
  • olive oil
  • 1/2 tsp. pepper
  • 2 tsp. parsley (dry kind)

Directions

    Boil rice.

    When almost dry, add eggs, pepper and parsley. Let cool.

    Shape balls and roll in crumbs.

    Fry in olive oil until brown.
