Rice-Broccoli Casserole

Ingredients

  • 2 pkg. frozen chopped broccoli
  • 1 stick margarine
  • 1 c. chopped onion (large)
  • 1 c. cream of mushroom soup
  • 1/2 c. milk
  • 1 c. raw rice
  • 1 1/2 c. sharp Cheddar cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

    Cook broccoli slightly.

    Do not overcook.

    Saute onion in margarine.

    Cook rice in 2 cups water.

    Drain broccoli.

    Combine all ingredients, saving small amount of cheese for top of casserole.

    Put in greased casserole and sprinkle with remainder of cheese.

    Bake uncovered at 325° for 30 minutes.

    Can be made a day ahead.

    Also freezes well.

    Allow extra 15 minutes cooking time if casserole has been refrigerated.
