Rice-Broccoli Casserole

- 2 pkg. frozen chopped broccoli
- 1 stick margarine
- 1 c. chopped onion (large)
- 1 c. cream of mushroom soup
- 1/2 c. milk
- 1 c. raw rice
- 1 1/2 c. sharp Cheddar cheese
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1Cook broccoli slightly.

2Do not overcook.

3Saute onion in margarine.

4Cook rice in 2 cups water.

5Drain broccoli.

6Combine all ingredients, saving small amount of cheese for top of casserole.

7Put in greased casserole and sprinkle with remainder of cheese.

8Bake uncovered at 325° for 30 minutes.

9Can be made a day ahead.

10Also freezes well.
-
11Allow extra 15 minutes cooking time if casserole has been refrigerated.
