- 1 1/4 cups sugar
- 1 cup rice flour
- 7/8 cup wheat flour
- 7 1/8 tablespoons oil
- 5 eggs
- 1 teaspoon baking powder
- sugar for sprinkling
Directions

1Preheat the oven to 356°F. Grease a round pan with margarine and coat with flour. Set aside.

2Place the eggs, oil and sugar in a bowl and beat with the mixer until creamy.

3Gradually add the two flours and the baking powder. Beat until dough is a fluffy and creamy.

4Place dough in prepared pan and sprinkle generously with sugar. Bake for 30 minutes, checking so as not to over bake. Remove from oven. Cool for 5 minutes before removing from pan so as not to crack the sugar topping.
