  • 1 1/4 cups sugar
  • 1 cup rice flour
  • 7/8 cup wheat flour
  • 7 1/8 tablespoons oil
  • 5 eggs
  • 1 teaspoon baking powder
  • sugar for sprinkling

Directions

    Preheat the oven to 356°F. Grease a round pan with margarine and coat with flour. Set aside.

    Place the eggs, oil and sugar in a bowl and beat with the mixer until creamy.

    Gradually add the two flours and the baking powder. Beat until dough is a fluffy and creamy.

    Place dough in prepared pan and sprinkle generously with sugar. Bake for 30 minutes, checking so as not to over bake. Remove from oven. Cool for 5 minutes before removing from pan so as not to crack the sugar topping.
