- 1 c. chopped celery
- 1 c. chopped onion
- 1 Tbsp. butter
- 1 c. tomato juice
- 1/2 c. tomato paste
- 1 lb. ground beef
- 1 tsp. salt
- 1/2 tsp. Italian seasoning
- 1/4 tsp. pepper
- 1 c. brown rice, cooked
- 1/4 c. Parmesan cheese
- 1/2 c. grated Cheddar cheese
Directions

1Saute celery and onion in butter in small skillet until golden brown.

2Cook, covered, until tender.

3Stir in tomato juice and tomato paste.

4Simmer for about 10 minutes.

5Brown ground beef with seasoning in skillet, stirring until crumbly.

6Stir in vegetable mixture.

7Layer hot rice and ground beef mixture in casserole dish.

8Sprinkle cheese on top.

9Bake at 350° for 10 to 15 minutes until cheese is melted.
