- 1 c. rice, uncooked
- 4 Tbsp. bacon drippings or oil
- 3/4 c. chopped onions
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 1 can stewed tomatoes
- 1 c. water
- salt to taste
- chili powder, hot sauce or jalapeno pepper to taste
Directions

1Heat oil and add uncooked rice.

2Cook until rice is lightly brown.

3Add vegetables and cook until softened.

4Add tomatoes, water and spices.

5Set heat for simmer.

6Cook for 20 to 25 minutes in covered pan.
