Rice Casserole

Ingredients

  • 1 Tbsp. butter
  • 2 Tbsp. oil
  • 1/2 lb. ground beef
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 c. instant rice
  • 2 c. water
  • 2 beef bouillon cubes
  • 1 1/2 c. shredded Monterey Jack or Cheddar cheese
  • 1 large tomato, sliced

Directions

    In a large skillet, saute onion and bell pepper in butter and oil mixture.

    Add ground beef; brown until done.

    Drain excess grease.

    Add water, rice and bouillon cubes.

    Stir; cover and let simmer on low heat until water is absorbed.

    Remove from heat. Layer top of rice with sliced tomato.

    Top with shredded cheese while cheese is hot.

    Cover until melted.
