Ingredients
- 1 Tbsp. butter
- 2 Tbsp. oil
- 1/2 lb. ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 c. instant rice
- 2 c. water
- 2 beef bouillon cubes
- 1 1/2 c. shredded Monterey Jack or Cheddar cheese
- 1 large tomato, sliced
Directions

1In a large skillet, saute onion and bell pepper in butter and oil mixture.

2Add ground beef; brown until done.

3Drain excess grease.

4Add water, rice and bouillon cubes.

5Stir; cover and let simmer on low heat until water is absorbed.

6Remove from heat. Layer top of rice with sliced tomato.

7Top with shredded cheese while cheese is hot.

8Cover until melted.
