- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 c. water
- 1 (14 oz.) can drained and chopped no-salt tomatoes
- 1 c. uncooked long grain rice
- 1 (4 oz.) can chopped and drained green chiles
- 2 Tbsp. minced fresh cilantro
- 1/2 c. (2 oz.) shredded low-fat Jack cheese
Directions

1Coat a small, nonstick skillet with vegetable cooking spray and place over medium-high heat until hot.

2Add onion and green pepper; saute until tender.

3Transfer to a large saucepan.

4Add water and tomatoes, stirring well; bring to a boil.
