  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 c. water
  • 1 (14 oz.) can drained and chopped no-salt tomatoes
  • 1 c. uncooked long grain rice
  • 1 (4 oz.) can chopped and drained green chiles
  • 2 Tbsp. minced fresh cilantro
  • 1/2 c. (2 oz.) shredded low-fat Jack cheese

Directions

    Coat a small, nonstick skillet with vegetable cooking spray and place over medium-high heat until hot.

    Add onion and green pepper; saute until tender.

    Transfer to a large saucepan.

    Add water and tomatoes, stirring well; bring to a boil.

    Stir in rice and chiles.
