- 1/3 c. raw white rice
- 2 c. milk
- 2 eggs, separated
- 3 Tbsp. granulated sugar
- 3/8 tsp. salt
- 1 tsp. vanilla
Directions

1Add rice to milk in double boiler.

2Cook, covered, over boiling water, until tender, about 1 hour.

3Beat egg yolks well.

4Add 3 tablespoons sugar; salt.

5Stir in some of the hot rice mixture. Return to double boiler; cook 2 minutes.

6Stir constantly.

7Remove; partially cool.
-
8Stir in vanilla.

9Beat egg whites quite stiff. Slowly add 3 tablespoons sugar, beating until stiff.

10Fold into rice custard.

11Chill.
-
12Serve as is with cream or whipped cream.
