  • 1 can consomme soup
  • 1/2 small green pepper, chopped
  • 1/2 small onion, chopped
  • 6 to 8 sliced mushrooms
  • 1 tomato, chopped
  • 3 Tbsp. butter or margarine
  • 2/3 c. Uncle Ben's rice

Directions

    Melt butter and saute vegetables for about 5 minutes.

    Add soup and rice.

    Pour into an ovenproof casserole dish.

    Cover and bake at 350° for 45 to 50 minutes or until rice has just soaked up soup.

    Let stand 5 minutes before serving.
