- 1 can consomme soup
- 1/2 small green pepper, chopped
- 1/2 small onion, chopped
- 6 to 8 sliced mushrooms
- 1 tomato, chopped
- 3 Tbsp. butter or margarine
- 2/3 c. Uncle Ben's rice
Directions

1Melt butter and saute vegetables for about 5 minutes.

2Add soup and rice.

3Pour into an ovenproof casserole dish.

4Cover and bake at 350° for 45 to 50 minutes or until rice has just soaked up soup.

5Let stand 5 minutes before serving.
