- 1/2 c. chopped onions
- 3 Tbsp. butter
- 4 c. cooked rice
- 1 small jalapeno pepper, finely ground (optional)
- 1 3/4 c. sour cream
- 1/2 lb. cottage cheese
- 1/2 lb. grated Longhorn cheese
- 1/2 bay leaf, crumbled
- 1 can whole Ortega chili peppers, halved
- salt and pepper to taste
Directions

1Saute onions in butter until light brown.

2Add the cooked rice, jalapeno (if used), the cottage cheese, Longhorn cheese and crumbled bay leaf.

3Alternate layers of rice mixture with strips of the chili peppers to form 4 layers in a greased casserole. Bake in a 375° oven for 25 minutes.

4Top with 1/2 cup grated Longhorn cheese.

5Bake for 10 minutes more.

6Serves 10.
