- 4 1/2 c. flour
- 6 tsp. baking powder
- 1 1/2 tsp. salt
- 3 Tbsp. sugar
- 3 eggs
- 3 Tbsp. shortening
- 3 c. cooked rice
Directions

1Cook rice, soak in milk overnight.

2Sift together, flour, baking powder, salt and sugar.

3In separate bowl, mix eggs, milk, shortening and rice mixture.

4Add to dry ingredients.

5Mix well. Fry in nonstick frying pan, turning once to brown.

6Makes enough pancakes for 25 people.
