  • 4 1/2 c. flour
  • 6 tsp. baking powder
  • 1 1/2 tsp. salt
  • 3 Tbsp. sugar
  • 3 eggs
  • 3 Tbsp. shortening
  • 3 c. cooked rice

Directions

    Cook rice, soak in milk overnight.

    Sift together, flour, baking powder, salt and sugar.

    In separate bowl, mix eggs, milk, shortening and rice mixture.

    Add to dry ingredients.

    Mix well. Fry in nonstick frying pan, turning once to brown.

    Makes enough pancakes for 25 people.
