Ingredients
- 4 bacon slices, diced
- 1/2 medium onion, finely chopped
- 1 c. regular rice
- 10 oz. frozen peas
- 1 c. water
- 7 oz. chicken broth
- 1 tsp. salt (optional)
- 1/4 tsp. pepper
Directions

1In skillet, cook bacon until crisp.

2Remove bacon to paper towels.

3Set aside.

4Pour off all but 1/4 cup bacon drippings from skillet.

5Add onion to skillet.

6Cook 5 minutes.

7Stir rice, peas, water, broth, salt and pepper into mixture.

8Heat to boiling. Reduce heat to low.

9Cover and simmer 15 to 20 minutes until rice is tender.

10To serve, toss rice mixture together with bacon.
