- 4 c. chicken broth
- 1 1/2 c. long grain rice
- 1/2 lb. fresh mushrooms, sliced
- 1/2 c. chopped onion
- 1/4 c. margarine, melted
- 1/2 c. chopped nuts
Directions

1In large saucepan, bring chicken broth to boil; stir in rice, return to boil.

2Cover and reduce heat; simmer 15 to 20 minutes until liquid is absorbed.

3Meanwhile, cook mushrooms and onion in butter until tender, about 2 minutes.

4Stir in nuts and cool 1 minute more.

5Add mushroom mixture to cooked rice and mix well. Serves 8.
