Rice Pilaf

Ingredients
- 1/4 lb. butter
- 1 medium onion, minced
- 1 c. uncooked white rice
- 1 can condensed consomme (chicken or beef)
- 2/3 c. water
- 1 c. sliced mushrooms (may use canned and drained)
- 1/4 c. sliced or slivered almonds, toasted (I prefer the sliced and peeled almonds)
Directions

1Melt butter in skillet.

2Add onion and rice.

3Saute 10 minutes or until mixture is a pale yellow.

4Add consomme, water and mushrooms.

5Bring to a boil.

6Turn into 1 1/2-quart casserole and cover.

7Bake at 400° for 25 minutes or until rice is tender and all liquid is absorbed.

8Serve garnished with almonds.
