  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 cup white rice (washed)
  • 1 1/2 cup chicken broth
  • 3/4 tsp salt
  • 1 onion (optional)

    Preheat oven to 350F

    Melt butter and oil in large saute Pan on medium heat

    Add onion

    Cook until translucent

    Remove from heat

    Combine rice and onion mixture in an 8 by 8 pan

    Stir thoroughly too coat rice

    Combine chicken, and salt in pan
