- 3 c. cooked long-grain rice
- 1/2 lb. mushrooms, sliced
- 4 green onions, chopped (including 1/2 of the tops)
- 3 Tbsp. butter
- 1 Tbsp. fresh lemon juice
- 3 Tbsp. chicken broth
- 1/4 c. chopped parsley
- 1/4 tsp. salt
Directions

1In a small skillet, saute onions and mushrooms in melted butter.

2Remove from heat.

3Add lemon juice, chicken broth, parsley and salt.

4Combine with cooked rice.

5Add additional butter, if desired.

6Makes 6 to 8 servings.
