- 2 c. rice
- 3 Tbsp. oil
- 1 small onion, chopped
- 1 beef bouillon cube
- 3 Tbsp. tomato juice
- salt and pepper
- 1 jar mushrooms, sliced
Directions

1Heat skillet with oil; add rice and chopped onion.

2Saute until rice starts to brown.

3Add tomato juice; stir while it is sizzling.

4Add bouillon cube, salt, pepper and mushrooms.

5Cover with about 3 cups water.

6Cover; reduce heat and simmer on low for about 30 minutes.

7May have to add water.

8Taste test for doneness.
