  • 2 large eggs
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 2 c. milk
  • 2 c. cooked rice
  • 1/2 c. raisins
  • 1 tsp. vanilla
  • nutmeg (to sprinkle on top)

    Preheat oven to 350°. In large bowl, beat eggs, sugar and salt. Scald milk and pour into egg mixture. Stir in raisins, rice and vanilla. Pour into slightly greased ovenproof baking dish, 1-quart size. Sprinkle with nutmeg. Place the dish in the oven in a pan of water 1-inch deep. Bake for 1 hour and 15 minutes.
