Rice Pudding

  • 2 c. cold cooked rice
  • 2 eggs, beaten well
  • 3/4 c. sugar
  • 2 1/2 c. milk
  • 2 tsp. grated nutmeg
  • 2 Tbsp. vanilla extract

Directions

    Mix milk, eggs and sugar and add rice.

    Mix well and add vanilla and nutmeg and mix lightly.

    Place in individual casserole dishes or larger casserole dish and bake at 400° until brown on top.

    Serves about 6.
