- 1/2 c. uncooked rice
- 3 c. boiling water
- 1 1/2 tsp. salt
- 1 (15 oz.) can Eagle Brand milk
- 1/2 c. seedless raisins
- 2 eggs
- 1 tsp. vanilla
- 1/4 tsp. nutmeg
Directions

1Put rice, salt and water into a heavy saucepan.

2Cover and cook over medium heat until water boils.

3Reduce heat and simmer 15 to 20 minutes or until rice is tender.

4Remove from heat.

5Stir in milk and raisins; add slightly beaten eggs gradually while beating into rice mixture.

6Return to low heat and cook, stirring constantly, until mixture coats large metal spoon.

7Remove from heat; stir in vanilla and nutmeg.

8Serve hot or cold.
