  • 4 c. milk
  • 1 c. (scant) Minute rice
  • 2/3 c. (scant) sugar
  • 1/2 tsp. salt
  • 4 eggs
  • 1 tsp. vanilla
  • 1 c. raisins
  • 1 stick butter
  • cinnamon
  • nutmeg to taste

Directions

    Bring rice to a boil in milk.

    Add sugar and salt.

    While heating, beat eggs and vanilla together.

    Put hot milk mixture in a 2-quart bowl, add eggs and raisins. Set bowl in shallow pan of water.

    Bake 1 hour at 325°, stirring after each 15 minutes, the last 15 minutes with butter and sprinkle with cinnamon and nutmeg.
