- 3/4 c. rice (not Minute)
- 2 c. milk
- 1 c. evaporated milk
- 4 eggs, separated
- 3/4 c. sugar
- 1 tsp. vanilla
- 1/4 to 1/2 c. raisins (optional)
- 6 Tbsp. sugar
Directions

1Boil rice in 3 cups of water for 45 minutes or until done. Heat milks in pan, but do not boil.

2Beat in a bowl the 4 yolks, 3/4 cup of sugar and vanilla.

3Add the boiled rice to the milk and stir.

4Add egg yolk mixture and simmer 15 minutes until slightly thickened.

5During the last 5 minutes, add raisins, if desired. Put in greased 8 x 8 x 2-inch Pyrex dish.
