Rice Pudding

  • 1/2 c. uncooked rice, washed
  • 3 c. boiling water
  • 1 1/2 tsp. salt
  • 1 (15 oz.) can Eagle Brand milk
  • 1/2 c. seedless raisins
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/4 tsp. nutmeg

Directions

    Put rice, salt and water into a heavy saucepan.

    Cover and cook over medium heat until rice is tender (15 or 20 minutes). Stir in milk and raisins.

    Add beaten eggs into rice mixture. Return to low heat.

    Cook while stirring constantly, until mixture coats the spoon.

    Remove from heat.

    Stir in vanilla and nutmeg. Serve hot or cold.
