- 6 c. milk (skim or fat-free)
- 1 large can evaporated milk or skim evaporated
- 2 1/2 c. water
- 1 c. regular rice
- 4 large eggs
- 1 c. sugar
- 1 tsp. vanilla
Directions

1Simply bring milk, water and rice to a boil.

2Boil for 40 or 50 minutes (less if recipe is cut in half) or until rice is done and mixture is thick and creamy.

3Stir often.

4In a large bowl, beat eggs, sugar and vanilla until very frothy.

5Add rice mixture slowly to egg mixture and fold.

6Chill.
