- 3 eggs, beaten
- 2 c. milk
- 1/3 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 2 c. cooked rice
- 1/3 c. raisins
- ground cinnamon
Directions

1In a 2-quart casserole, combine eggs, milk, sugar, vanilla and salt.

2Add rice and raisins.

3Mix well.

4Microwave on High, uncovered, just until thickened, 8 to 10 minutes.

5Sprinkle with cinnamon.

6Let stand 30 minutes without stirring.

7Serve warm or chilled with light cream.
