Rice Pudding(Crock-Pot Style)

  • 1 c. rice (not instant)
  • 1 tsp. salt
  • 3 eggs, beaten
  • 1 (3 oz.) box vanilla pudding (not instant)
  • 2 tsp. vanilla
  • 8 c. milk
  • 1 c. sugar
  • 1 can evaporated milk
  • raisins (if you desire)
  • cinnamon and nutmeg to taste

Directions

    Put milk, rice, salt and sugar in the crock-pot.

    Cook on high for 30 minutes.

    Stir.

    Cook another 30 minutes.

    Stir. Meanwhile, beat eggs; add evaporated milk, vanilla and vanilla pudding.

    Add this to rice in the crock-pot.

    You may add raisins if you desire; also some cinnamon and nutmeg to taste.

    Cook another 20 to 30 minutes.
