Rice Pudding (Custard)

Ingredients

  • 2 c. cooked rice
  • 3 eggs
  • 2 cans evaporated milk
  • 3/4 c. sugar
  • 2 c. milk
  • 1 tsp. vanilla
  • 1/2 c. raisins

Directions

    Mix the rice and raisins in the bottom of a buttered baking dish.

    Mix the other ingredients and pour over the top of the rice and raisins.

    Place baking dish in a shallow pan of water and bake in a 425° oven for 15 minutes and in a 375° oven for the rest of the baking time (about 1 hour total).

    Test like custard with a knife for doneness.
