Rice Quiche

Ingredients

  • 1 c. cooked rice
  • 1 egg, beaten
  • 2/3 c. shredded Swiss cheese
  • 3 eggs
  • 1 can (13 oz.) evaporated milk
  • 1/2 tsp. salt
  • pinch of nutmeg, sugar and cayenne pepper
  • 1 pkg. (3 oz.) thin sliced ham
  • 3/4 c. shredded Cheddar cheese

Directions

    Mix rice, 1 egg and Swiss cheese.

    Press into 9-inch pie pan; refrigerate.

    Beat 3 eggs, milk, salt, nutmeg, sugar and pepper. Stir in ham and Cheddar cheese.

    Could also add chopped onion if you would like.

    Pour into crust and bake 15 minutes at 400°. Reduce and bake at 300° about 30 minutes.

    Let cool before cutting. Serves 4 to 5.
