- 1 c. cooked rice
- 1 egg, beaten
- 2/3 c. shredded Swiss cheese
- 3 eggs
- 1 can (13 oz.) evaporated milk
- 1/2 tsp. salt
- pinch of nutmeg, sugar and cayenne pepper
- 1 pkg. (3 oz.) thin sliced ham
- 3/4 c. shredded Cheddar cheese
Directions

1Mix rice, 1 egg and Swiss cheese.

2Press into 9-inch pie pan; refrigerate.

3Beat 3 eggs, milk, salt, nutmeg, sugar and pepper. Stir in ham and Cheddar cheese.

4Could also add chopped onion if you would like.

5Pour into crust and bake 15 minutes at 400°. Reduce and bake at 300° about 30 minutes.

6Let cool before cutting. Serves 4 to 5.
