  • 1 c. cooked rice
  • 3 eggs, separated
  • 1/4 lb. Cheddar cheese, grated
  • 2 Tbsp. butter
  • 1/2 c. milk

Directions

    Separate eggs; beat egg whites until they form stiff peaks. In another bowl combine egg yolks, cold rice, milk and cheese. Gently fold in egg whites.

    Butter baking dish; gently spoon in mixture.

    Bake at 300° for 30 to 40 minutes or until top is golden brown.
