  • 3 to 4 c. cooked rice (do not overcook)
  • 1 pt. sour cream
  • 2 Tbsp. butter
  • 1 to 2 cans drained chopped green chilies
  • 3/4 c. Parmesan cheese
  • 1/2 lb. sharp Cheddar cheese, grated

Directions

    Butter casserole dish.

    Mix sour cream and rice.
  3. 3
    Put half of rice mixture in dish.
  4. 4
    Sprinkle on chopped chilies, cover with Cheddar cheese and add remaining rice.

    Cover with Parmesan cheese.

    Bake for 20 minutes in 350° oven.

    Can be made ahead and frozen.
