- 1 c. long-grain rice
- 1 small onion, chopped
- 2 Tbsp. oil
- 3 c. water
- 1/4 c. jalapeno relish
- 1 envelope Mexican rice seasoning mix
- 1/2 c. frozen peas
- 1/2 lb. crabmeat or shrimp
- 1 large tomato
Directions

1Peel, core and coarsely chop tomato; set aside.

2In skillet, cook rice and onion in hot oil over medium heat, stirring frequently, until rice is golden brown, 7 to 10 minutes.

3Remove from heat.

4Stir in water, jalapeno relish and Mexican rice seasoning mix.

5Cover and simmer 20 minutes or until most of liquid is absorbed.

6Stir in peas; cook 5 minutes more.

7Gently stir in crab or shrimp and tomato; heat through, 1 to 2 minutes more.

8Makes 5 servings.
