Rice With Smoked Ham

- 2 Tbsp. butter
- 2 Tbsp. onions, finely chopped
- 1/4 lb. lean cooked smoked ham, cut into 1/4 inch cubes
- salt to taste (optional)
- 1 c. raw rice
- 1 bay leaf
- 1 1/2 c. fresh or canned chicken broth
Directions

1Heat 1 tablespoon of the butter in a saucepan.

2Add the onion. Cook, stirring, until the onion is wilted.

3Add the ham and rice and stir to blend.

4Add the broth, salt and bay leaf and cover. Bring to a boil and then simmer for 17 minutes.

5Stir in the remaining 1 tablespoon of butter.

6Remove the bay leaf and serve. Yields 4 servings.
