- 2 c. fresh spinach
- 1 small onion, chopped
- 1/2 to 1 c. parsley
- 2 c. rice
- 2 c. College Inn chicken broth
- butter or oil
- grated cheese to taste
- salt and pepper
Directions

1Mix oil, onion and spinach. Cook over low heat for 5 minutes. Add rice and parsley.

2Stir to coat.

3Add chicken broth. Cover and cook with rice until tender.

4Add grated cheese, salt and pepper before fully cooked.

5Add more broth, if needed.
