- 100 grams Chocolate
- 40 grams Unsalted butter
- 50 ml Heavy cream
- 2 Egg
- 40 grams Sugar
- 10 grams [A] Cake flour
- 12 grams [A] Cocoa powder
Directions

1Microwave the chocolate and butter to melt and soften (90 seconds at 700W).

2Add heavy cream and keep it warm (50C).

3Add sugar into the egg and whip well until it sits in your whisk.

4Fold in the mixture from step 1 and mix well.

5Combine and sift the [A] ingredients into the bowl.

6Fold in lightly.

7Avoid any kneading.

8Pour into the pan and bake for 15 minutes in a 180C preheated oven.

9Then bake for another 20 minutes at 160C.

10The cake is very soft when freshly out of the oven, so take care to cool it down before removing the pan.

11Slice it into desired sizes.

12Here's a variation using a 15cm cake pan.

13Even when it occupies the whole pan when it's freshly baked, sometimes the batter sinks when it's cooled down.

15Decorate with lots of powdered sugar.
