Rich Chocolate Mousse

- 8 oz. bittersweet chocolate chips
- 4 eggs
- 1/2 oz. butter
- 3 Tbsp. coffee
- 2 Tbsp. rum (optional)
Directions

1Melt the chocolate chips in double boiler until they are of a smooth consistency.

2Add the butter and stir into the hot, melted chocolate.

3Stir in three tablespoons coffee and rum if desired. Separate the egg yolks from the whites.

4Add the egg yolks to the chocolate mix, one at a time.

5Beat the egg whites until the mixture is stiff and forms peaks.

6Mix into the chocolate with a wooden spoon.

7Pour the chocolate mousse into dessert glasses and leave to set in the refrigerator.

8The chocolate mousse can be decorated with whipped cream and/or toasted almond slivers.
