Ingredients

  • 1 stick margarine
  • 1 1/2 c. Minute rice
  • 2 c. diced raw squash (yellow or zucchini)
  • 1/2 c. diced onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can cream of mushroom soup
  • 1 1/2 cans water
  • grated cheese

Directions

    Melt margarine in a 9 x 13-inch baking dish.

    Spread uncooked rice around in dish.

    Spread squash in a layer over rice.

    Sprinkle onion over squash.

    Add salt and pepper.

    Mix water with soup and pour over mixture.

    Cover with foil and bake 1 hour and 15 minutes at 325°.

    For last 10 minutes of baking, top with grated cheese and allow to melt.
