- 1 stick margarine
- 1 1/2 c. Minute rice
- 2 c. diced raw squash (yellow or zucchini)
- 1/2 c. diced onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 can cream of mushroom soup
- 1 1/2 cans water
- grated cheese
Directions

1Melt margarine in a 9 x 13-inch baking dish.

2Spread uncooked rice around in dish.

3Spread squash in a layer over rice.

4Sprinkle onion over squash.

5Add salt and pepper.

6Mix water with soup and pour over mixture.

7Cover with foil and bake 1 hour and 15 minutes at 325°.

8For last 10 minutes of baking, top with grated cheese and allow to melt.
