Rich Walnut Fruit Cake

  • 3 c. walnuts
  • 1 c. currants
  • 2 c. coarsely chopped mixed candied fruits and peels
  • 1 1/2 c. snipped prunes
  • 1 1/2 c. seedless raisins, chopped
  • 1 c. candied cherries, halved
  • 1/2 c. bourbon or orange juice
  • 1 c. butter or margarine
  • 1 c. brown sugar, packed
  • 6 eggs
  • 1/2 oz. unsweetened chocolate, melted
  • 2 c. sifted all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 2 c. cake flour
  • 1 tsp. salt
  • 2 Tbsp. cocoa
  • 1/2 c. Crisco
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 c. sugar
  • 2 oz. red food coloring
  • 1 c. buttermilk

    Sift the first 3 ingredients; set aside.

    Cream shortening and sugar.

    Add eggs, vanilla and food coloring.

    Add sifted dry ingredients with buttermilk; mix and fold in last.

    Do not beat into batter.

    Bake at 350° for 30 minutes in 2 (9-inch) greased and floured pans or in Bundt pan.

    Frost with white or red confectioners icing or drizzle glaze for that holiday touch.
