- 1 pkg. yellow cake mix
- 2 lb. Ricotta
- 2 eggs
- 1 tsp. vanilla
- 1 tsp. lemon flavor
Directions

1Grease and flour 9 x 12 x 13-inch pan.

2Mix together 1 package of yellow cake mix according to directions on package.

3Pour into prepared pan.

4In separate bowl, mix Ricotta, eggs, sugar, vanilla and lemon flavor.

5Beat until well mixed.

6Pour over cake batter. Bake in 350° oven for about 1 hour.

7Cool thoroughly.

8When cool, sprinkle with confectioners sugar.

9Freezes well.

10Also on individual pieces you can sprinkle with rum just before serving.
