  • 1/2 lb. (2 sticks) butter
  • 2 eggs
  • 4 c. flour
  • 2 tsp. lemon extract
  • 1/4 tsp. nutmeg
  • 2 c. sugar
  • 1 lb. Ricotta cheese
  • 1 tsp. baking powder
  • 1 tsp. baking soda

Directions

    Heat oven to 350°.

    Cream butter and sugar together.

    Add eggs and beat well after each one.

    Add Ricotta, mixing well, with lemon extract and nutmeg.

    Sift flour, baking powder and baking soda.

    Add this to creamy mixture a little at a time, beating one minute.

    Gradually drop by teaspoon on ungreased cookie sheets.
