- 1/2 lb. (2 sticks) butter
- 2 eggs
- 4 c. flour
- 2 tsp. lemon extract
- 1/4 tsp. nutmeg
- 2 c. sugar
- 1 lb. Ricotta cheese
- 1 tsp. baking powder
- 1 tsp. baking soda
Directions

1Heat oven to 350°.

2Cream butter and sugar together.

3Add eggs and beat well after each one.

4Add Ricotta, mixing well, with lemon extract and nutmeg.

5Sift flour, baking powder and baking soda.

6Add this to creamy mixture a little at a time, beating one minute.

7Gradually drop by teaspoon on ungreased cookie sheets.
